Every meal you eat — a bowl of dal, a banana, an egg, a handful of nuts — is really a package of ingredients your body breaks down and uses to grow, move, think, and heal. 🍽️ Part 1: Meet the Nutrients
Nutrients are chemical substances in food that give us energy and the raw materials our bodies need to grow. Scientists group them into a few broad families, and each one has its own special job.

Carbohydrates — the energy givers. Found in cereals, potatoes, bananas, sugarcane, sweet potato, and wheat. They're your body's quickest fuel source.
Proteins — the body-builders. Found in pulses, meat, fish, eggs, and milk. Your body uses protein to build new cells and repair old, damaged ones.
Fats — the energy banks. Found in oil, ghee, nuts, butter, cheese, and eggs. Besides giving energy, fat stored under your skin also helps keep you warm.
Vitamins and Minerals — the protectors. Found in green leafy vegetables, fruits, milk, eggs, meat, and fish. Your body only needs these in small amounts, but they're what shield you from disease. Calcium and phosphorus, for instance, are the two minerals responsible for strong bones and teeth.
Roughage — the digestion helper. Mainly comes from whole grains, fresh fruits, and vegetables. It isn't digested at all — it simply adds bulk to your food and helps it move smoothly through your gut, preventing constipation.
Water — the quiet essential. Water makes up almost 70% of your body weight. It doesn't provide any nutrients itself, but it dissolves and transports nutrients, flushes out waste as urine and sweat, and helps cool the body down.
⚖️ Part 2: What Makes a Diet "Balanced"?
A balanced diet is one that gives your body all the nutrients it needs, in the right amounts. There's no single balanced diet that fits everyone — it depends on your age, sex, the kind of physical activity you do, and whether you're healthy or unwell. A growing child needs more protein, while someone doing hard physical labour needs more energy-giving carbohydrates and fats.

One group of foods worth knowing about: millets (like jowar, bajra, and ragi) are often called "nutri-cereals" because they're rich in fibre, essential fatty acids, protein, vitamin B, and minerals like calcium, iron, magnesium, potassium, and zinc — all of which help prevent disease. That said, millets alone aren't a complete diet either; they're still missing things like vitamin B12 and vitamin C, so variety always matters more than any single "superfood."
🚚 Part 3: Food's Long Journey to Your Plate
Before it reaches your table, food often travels a surprisingly long distance — from farm, to factory, to market, and finally to your home. This total distance is called food miles.

Choosing local, seasonal produce over food that's travelled a long way helps cut down food miles — which means lower transport costs and less environmental pollution.
🔥 Part 4: Cooking with Care
Some foods can be eaten raw, but many need to be cooked first — cooking makes food tastier, easier to digest, and kills disease-causing microorganisms. But cooking the wrong way can undo all that good: overheating, deep frying, and repeatedly washing pulses and vegetables after cutting them can destroy the very nutrients you're trying to eat. In fact, washing fruits and vegetables after cutting (instead of before) causes a real loss of vitamins and minerals.
Cooking methods have also changed a lot over generations.

Traditional Indian kitchens relied on a mud chulha (cooking stove) and a stone grinder called a sil-batta. As kitchens modernised, these were gradually replaced by gas stoves and electric grinders — faster, but it's worth remembering that traditional methods like slow cooking and fermentation often preserved nutrients (and gut-friendly bacteria) really well too.

⚠️ Part 5: When Nutrients Go Missing
When a diet lacks one or more nutrients for a long time, it can lead to a deficiency disease. The best protection is simple: eat a varied, balanced diet so your body never runs short of any one nutrient.

Goitre — caused by lack of iodine. The thyroid gland in the neck swells up, and reduced thyroxine production can slow a child's physical and mental growth.
Scurvy — caused by lack of vitamin C. Gums swell and bleed, and wounds take longer to heal. Citrus fruits like oranges and lemons prevent it.
Anaemia — caused by lack of iron, which reduces haemoglobin in the blood. A person looks pale, tires quickly, and loses their appetite.
Rickets — caused by lack of vitamin D. Bones become soft and bent — visible as bowed legs, a "pigeon chest," or a curved spine in children. In adults, bones become brittle and fracture easily.
Beri-beri — caused by lack of vitamin B1. It leads to weak muscles and very little energy.
Night blindness — caused by lack of vitamin A. It causes poor vision and an inability to see in the dark.
Two more conditions worth knowing, both caused by protein shortage in children: Kwashiorkor (a swollen, "pot-like" belly with thin legs and patchy skin) and Marasmus (severe thinning of the whole body, with loose folds of skin), which also involves a lack of carbohydrates and fats.
